If you read my menu last week you're not going to find anything different! Our menu plan was pretty much thrown out the window this past week. We had leftovers one night, dinner for my mom's birthday one night, 'whatever you can find one night', my mom bought the boys dinner one night while I got out of the house for a while, birthday party Sat night... it was that kind of week. So the only difference is that we're not having the beef enchiladas.. that was the only meal I cooked!
Spaghetti, Salad
Roast with Potatoes & Carrots (using this new recipe for homemade onion soup mix on my roast)
Chicken Salad, Carrots and Ranch Dressing
Pancakes, Scrambled Eggs, Oranges
Chicken Fried Steak Strips (one of the few things I fry!), Broccoli, Mac and Cheese
Breakfasts: Pancakes, Maple Pecan Muffins, Cheerios... all those with yogurt/cheese & fruit, I'm also hoping to make some of these granola bars, although I just break them up and call them granola bites. They are great by themselves, on yogurt or in a little milk!
Lunches: Peanut Butter and Jelly/Honey, Tortilla Pizzas (with leftover spaghetti sauce), with leftover veggie sides from our dinners. I always have frozen corn/green peas in the freezer and carrots in the fridge, plus fruit!

oh i am glad i am not the only one with weeks like that... although sometimes it seems more like i have MONTHS like that! i made country friend steak for the first time last week. i am going to try those granola bars too. we love granola... but it is SO expensive and i have yet to find a recipe for it that i love.
Molly, I've had a hard time with granola bars too. These are very crunchy and to me, not that great as a bar since we like a chewy bar. But for a topping on yogurt, as a cereal or as a crumbled snack it's good! I added cranberries to mine too.
Girl, you are not alone with those weeks... We have them often around here =)
I bought the stuff today to make the beef enchiladas...I can't wait to give those a try =)
