This recipe is a combination of two recipes I found online! It was SO yummy! It's definitely more of a fall/winter dish but really it's worth heating up the kitchen! I had some local grass fed beef from the dairy and potatoes, onion and carrots from my CSA box. I started to do some online recipe searching and came up with this yummy, healthy dinner:
Meat and Potato Pot Pie
(adapted from Meat & Potato Pie)
1 lb ground beef
1 onion, diced
6-7 (1.5 lbs) new potatoes, diced small
1 clove garlic, chopped
1 tsp salt
1 tsp paprika
1/2 tsp black pepper
1/4 cup whole wheat flour
1 3/4 cup water
1 TBS soy sauce
1 tsp Worcestershire sauce
1. Place potatoes, carrots and onions in a large skillet with a drizzle of olive oil. Cook on med-high heat until tender. In the mean time cook ground beef and drain.
2. When the veggies are tender add in the cooked ground beef and the garlic and stir for a minute or two. Add flour and cook another 2 minutes. Pour in water, soy sauce and Worcestershire sauce. Bring to a boil. Cook for 5-10 minutes until sauce has thickened.
3. Pour mixture into a buttered deep dish pie plate or a 2 quart pyrex dish. Place rolled biscuit topping over the meat mixture and bake for 20-25 minutes, until biscuit is golden brown on top!
